Species You'll Want to Hook

They hang around wrecks and reefs, and while we can target them year-round, summer is when they're most active.

Late spring through summer is the best time to target them when the water warms up and the bait moves in.

Goliath Grouper

Sea Trout, or Speckled Trout, are one of our most popular inshore targets. These silvery fish with dark spots average 1-5 pounds, though trophy "gator" trout can reach 10 pounds or more. Look for them around grass flats, oyster bars, and creek mouths. They love to ambush bait fish, so we'll use live shrimp under a popping cork or artificial lures like soft plastics and topwater plugs. Fall and winter are prime seasons when big schools gather in deeper holes. Sea trout put up a good fight on light tackle, often jumping clear out of the water. They're also excellent eating - the meat is white, flaky and mild. Here's a local secret: fish the tide changes, especially the first of the outgoing tide. That's when trout really turn on and start feeding. It's a blast when you get into a hot bite and catch one after another!

The Goliath Grouper lives up to its name - these massive fish can grow over 8 feet long and weigh up to 800 pounds. You'll find them hanging around reefs, shipwrecks, and other structure in relatively shallow water, usually less than 150 feet deep. Goliaths are ambush predators, gulping down whole fish, crabs, and even small sharks. While we can't legally harvest them, hooking into one is still an incredible experience. It's like trying to pull a Volkswagen off the bottom! Summer is prime time as they gather to spawn. We use super heavy tackle - 600 pound test line and 20/0 circle hooks with big live baits. The key is getting them away from the structure before they can break you off. Even though we release them, it's amazing to see these prehistoric-looking giants up close. Just remember to leave them in the water for a quick photo before letting them go.

Mahi Mahi, also called Dorado, are some of the most exciting fish we target offshore. These colorful speedsters grow fast, averaging 15-30 pounds within their first year. We find them in open water, often near floating debris or weed lines. Spring through fall is prime season when the water warms up. Mahi are aggressive surface feeders, so we'll troll with rigged ballyhoo or colorful lures that skip across the top. When hooked, they go ballistic - leaping, tail-walking, and making blistering runs. It's non-stop action! They also make fantastic eating, with firm white meat that's great for grilling. Here's a tip: when you hook one, leave it in the water. Others will often follow it to the boat, letting you catch several from the same school. There's nothing like the electric blue and gold colors of a fresh-caught mahi - it's a sight you won't forget!

Mahi make excellent table fare too - the meat is firm, white, and mildly sweet. Here's a pro tip: look for frigate birds circling an area, as they often lead us right to schools of feeding mahi. It's an awesome sight when we find a big school - you might catch several in quick succession!
